This is a sitemap template that can be used to generate sitemap.xml wihout using any plugins just pure templating.
Copy this sitemap.xml template to the root of your Jekyll site and it should work right away.
To exclude a page add the following to the front matter of that page.

---
Feel free to modify the sitemap to make any changes specific to your site.
